Simple Maple-Almond Granola

I have been meaning to share this recipe for a little while now, but each time I've made the recipe I forgot to take photos before eating it all! Granola has become a go-to breakfast for me for the past few months, and it has been so nice to switch it up with all of the delicious summer fruit we had. I also love having a quick granola recipe on hand that I can switch up the flavors or add-ins for a new taste.
Oats are an under-rated super food in my opinion! They are a complex carbohydrate, which helps to balance blood sugar and improve metabolism. Plus! They are full of soluble fiber and many important vitamins and minerals. When you mix them with almond milk, berries and nuts you have a perfectly balanced and quick breakfast!
Here's the recipe:
Ingredients:
2 cups large flake oats
3/4 cup slivered or chopped almonds
3 tbsp. hemp hearts
1 tsp. almond extract
1/4 cup coconut oil, melted
1/4 cup + 2 tbsp. pure maple syrup
optional: unsweetened, shredded coconut (~1/2 cup)
Method:
Preheat oven to 250 degrees and line a large baking sheet with parchment paper
Mix all dry ingredients in a large bowl and set aside.
Melt coconut oil over low heat. Remove from heat and stir in maple syrup and almond extract.
Pour wet ingredients over dry and stir to mix thoroughly, ensuring all dry ingredients are coated
Spread the mixture on the baking sheet as thinly as possible
Bake for 35-40 minutes, stirring every 10 minutes
Store in an air-tight container for up to a week (if it lasts that long!)
I like to eat this as a cereal with almond milk and topped with fresh berries or seasonal fruit.
